Florida is perfectly positioned to be at the crossroads of barbecue goodness, with our cities and cuisine influenced by both the barbecue-loving South (think Georgia, the Carolinas and beyond) as well as the techniques carried over from the Caribbean. The word “barbecue” itself stems from the Caribbean Taino word barbacoa, referring to the process of grilling on a wooden grate.
As the old rule of real estate goes, location, location, location is extremely important—and the same holds true for our beloved barbecue! We here in Florida are lucky to be located where Southern barbecue meets fresh, flavorful techniques and ingredients from the world of Caribbean cuisine.
